Navda Honey Cake

Honey cake

Ingredients:

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 3/4 cup honey

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup vegetable oil

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 1 cup hot water

  • Optional: 1/2 cup chopped nuts or raisins

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or a bundt pan.

  2. Mix Dry Ingredients: In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.

  3. Mix Wet Ingredients: In another bowl, combine 3/4 cup honey, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 cup vegetable oil, 3 large eggs, and 1 teaspoon vanilla extract. Mix until well combined.

  4. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

  5. Add Hot Water: Stir in 1 cup of hot water until the batter is smooth. If using, fold in 1/2 cup of chopped nuts or raisins.

  6. Bake: Pour the batter into the prepared pan and spread it out evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  7. Prepare the Honey Glaze: While the cake is baking, heat 1/4 cup of honey and 1 tablespoon of lemon juice in a small saucepan over low heat until warm and combined.

  8. Glaze the Cake: Once the cake is baked, remove it from the oven and allow it to cool in the pan for about 10 minutes. Poke holes all over the top of the cake with a toothpick or fork. Pour the warm honey glaze over the top of the cake, allowing it to soak in.

  9. Cool and Serve: Allow the cake to cool completely before slicing and serving.
