Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or a bundt pan.
-
Mix Dry Ingredients: In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.
-
Mix Wet Ingredients: In another bowl, combine 3/4 cup honey, 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 cup vegetable oil, 3 large eggs, and 1 teaspoon vanilla extract. Mix until well combined.
-
Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
-
Add Hot Water: Stir in 1 cup of hot water until the batter is smooth. If using, fold in 1/2 cup of chopped nuts or raisins.
-
Bake: Pour the batter into the prepared pan and spread it out evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
